Finnish jam-filled cookies

While waiting for Christmas snacks, here is my recipe for Herrasväen pikkuleivät, the Finnish cookies filled with strawberry or raspberry jam.

Being a raspberry lover, my recipe will be raspberry, but you can fill the cookies with whatever you want: spread, caramel, etc.

Ingredients to prepare jam-filled cookies

  • butter

    200g

    raspberry jam

  • levure

    1 sachet

    baking powder

  • vanille

    1 sachet

    vanilla sugar

  • sucre

    Powdered sugar

Steps to prepare the jam-filled cookies


Step 1: Mix the butter and sugar

Melt the butter in a double boiler or in the microwave.

Once melted, mix it with the white sugar and the vanilla sugar. Whisk until you obtain a frothy mixture.

Then add the egg to the butter and sugar mixture. Beat with a whisk.

Step 2: Dry ingredients

Mix the flour and the yeast together.

Then add the flour little by little to the butter + sugar mixture.

Start by mixing with a whisk, then switch to a spatula and finally use your hands. This allows you to knead the dough better.

Step 3: Let the dough rest

Let the dough rest in the refrigerator for 1 hour.

Step 4: Roll out the dough

First of all, preheat your oven to 200°.

Once the dough has rested, roll it out with a rolling pin.

Roll out the dough to a thickness of 3 to 4 millimeters.

Roll out the dough on parchment paper or a well-floured work surface. Otherwise you won't be able to lift it off!

Step 5: Form 6-cm circles

With a round cookie cutter, form 40 6-cm circles.

Then, on half of them, make an opening with a small cookie cutter. Personally, I chose a small 3-cm star, but do as you wish!

You can make this hole in the middle or on the side!

Step 6: Baking

Bake your cookies at 200° in a hot oven for 7 minutes.

When they come out of the oven, your cookies should be slightly browned and still soft in the middle.

Then let them cool on a rack.

Step 7: Topping

Once the cookies are cool, take a cookie without a hole in it and spread some jam on it. Be generous, your cookies will be better!

Then place a cookie with a hole on top.

Finally, sprinkle a little powdered sugar over the cookies. It's ready!
