Do you like pancakes and cakes 🥞? Then you'll love this recipe, which is a tasty blend of both! This emblematic Finnish dessert is as delicious as it is simple to prepare. Pannukakku can be enjoyed hot or cold, as a dessert, snack or breakfast. For the finishing touch, enjoy them plain or with sugar, whipped cream or jam. A gourmet delight to share without moderation!

Ingredients to prepare Pannukakku, an oven-baked pancake

  • farine

    280g

    wheat flour

  • butter

    100g

    butter

  • lait

    80cl

    whole milk

  • sucre

    130g

    sugar

  • oeuf

    2

    eggs

  • levure

    1 sachet

    of yeast

  • vanille

    1 sachet

    vanilla sugar

  • salt

    1 pinch

    of salt

Preparation: Pannukakku


Preheat oven to 200°C

Step 1: Mix the dry ingredients

Mix the sifted flour, sugar, baking powder, vanilla sugar and salt in a bowl.

Step 2 : Add remaining ingredients

Melt the butter in the microwave or bain-marie.

Make a well and crack the eggs into it. Add the melted butter, then the milk a little at a time. When you add the milk, keep beating the dough to prevent lumps from forming.

Step 3: Mix vigorously

Mix vigorously until smooth. If there are any lumps, use a soup mixer to remove them.

Step 4: Making the pannukakku

For this step, you have several choices for baking your pannukakku:

  • Use your oven's baking sheet:
    • Line your oven tray with baking paper, then place your dough on it.
  • Use an ovenproof dish:
    • Butter your dish so that the pannukakku doesn't stick when unmolded. Then pour the dough into the dish.

Bake for 30 minutes at 200°C, or until golden brown on top.

Step 5: Tasting

Once cooked, remove the pannukakku from the oven and leave to rest for a few minutes before cutting into slices.

Serve the pannukakku warm, sprinkled with powdered sugar, jam, honey or fresh fruit to taste.
